Data source docs need updating

This is an epic issue to track items for Gardening Week. Feel free to address the issues independent of Gardening Week. Most of our data source documentation is woefully out of date, especially the screenshots. We need someone who is conversant with each data source to go through each data source topic and: - Update old screenshots to the current Grafana version. - Update and correct any information that is out-of-date.
