Documentation suggestion: add small paragraph about quantization in README.md

### Enhancement / Documentation I suggest to add a small paragraph explaining the effect and why someone should or should not download a quantized version of a model. I feel like it's a fairly technical subject but it can impact the perceived performance of any kind of user. I would add it possibly under the Model Library section. I'd be open to write it. (Ollama is awesome thanks for creating it!)
